Lemon Parsley Rice

2 tbsp. Olive Oil

1 Onion, Diced

4 cloves Garlic, Minced

1 1/2 c. White rice, rinsed

zest of 2 Lemons

Juice of 2 lemons

3 c. Chicken Broth

1/4 c. Parsley, chopped

Salt and Pepper


(1.) In a large pot over medium heat add the oil, Onion and the Garlic. Cook over medium low heat until tender about 10 minutes.  Add the rice and cook stirring often until toasted. About 5 minutes.

(2.) Add the Lemon Zest, Lemon juice and the chicken broth and bring to a boil. cook over low heat for 10 minutes. Cover with a lid and let cook for 15 to 20 minutes or until the rice is tender stirring occasionally. Add more chicken broth or water if needed.

(3.) When the Rice is tender add the salt, pepper and the parsley and stir together. Check for seasoning and add more salt and pepper if needed.  Pour into a serving platter or bowl and serve.


You can serve this rice as a side dish to any Mexican or spanish dish. It goes great with them all.
