Honey Mustard BBQ Chicken

I love BBQ. It can be cooked on the Grill, on a stove top grill pan or just simply baked.  There is just something about Good BBQ that just makes everyone happy. In the south it is every where you go and it is all awesome. This is one of my families favorites. It is a different spin on the original BBQ and it is so good.

1 c. BBQ Sauce ( your favorite)

1/4 c. Dijon Mustard

1 Tsp.  Hot Sauce ( I use tabasco )

Zest of 1 lemon

Juice of 1 lemon

Salt and Pepper to taste

1/4 c. Honey ( I use clover or honey suckle)

2 lbs. Chicken Thighs

1 Tsp. Dried Thyme


(1.) In a bowl whisk everything together except for the chicken until smooth and incorporated. Add the Chicken and cover with plastic or a lid and chill for 2 to 3 hours.

(2.) Heat up a grill pan or a skillet over medium heat. Add 1 Tbsp of Olive Oil and add a few pieces of the chicken to the pan. Do not over crowed the pan. Cook for about 5 minutes on each side so it gets that BBQ look to it. That is the best part I think. Remove to a sheet pan and bake for 15 to 20 minutes in a 350* oven until the chicken is cooked through. Remove from the oven and place on a serving platter and serve.


This is a very simple dish to throw together as you can tell. You can omit the Hot sauce if you do not want it to be spicy or you can add more if you want it a lot more spicy. This also travels well if you want to go on a picnic at a park. Just tightly cover and place in a cooler or travel cooler bag.  It is also fun to make for tail gating or just game day at home. You can substitute the Thighs for Wings and follow the above directions. Sometimes I throw on some minced parsley or sesame seeds to make it look pretty.
