Gazpacho

This soup is cool and refreshing. It is perfect to cool you down on those hot days of summer or it can be a relaxing meal on those rainy days.  I love serving this dish with a light side salad. This recipe is so very easy to make you just throw everything in a blender or food processor and give it a whirl. Chill before serving and you have one delicious meal.  Here are the ingredients you will need.

2 celery stalks, diced small

2 cucumbers, seeded and diced small

1/2 red onion, thinly sliced and chopped

4 large tomatoes, diced

1 zucchini, diced small

1 squash, diced small

2 cloves of garlic, minced

1/4 c. olive oil

1 tbsp. white wine vinegar

salt and pepper ( to taste)

4 c. tomato juice ( I use v8)

2 tbsp sugar

 

(1.) In a food processor or blender add half of all of the ingredients except for the salt and pepper. Blend until smooth. Pour into a large bowl and blend the other half of the ingredients until smooth. Pour into the bowl with the other half of the soup. Add the salt and pepper to taste and mix together. Cover with plastic and chill for 1 hour so the flavors can develop.

(2.) Ladle in to bowls and serve with a light side salad for a complete meal.

 Variations: You can omit the squash if you do not like it and add another vegetable if you prefer. You can add some hot sauce or jalapeno for a spicy kick. Add 1/2 cup of cream for a more creamy texture.

 If  you have kids they will love making this with you. Let them add the ingredients to the processor and let them blend it. If your kids help with making the food they will more than likely eat what they make. Kids are funny that way.
