B-L-T Spaghetti

This is a kid friendly recipe. It is very easy to make and the kids will love it.


Salt and pepper

4 Strips of Bacon, Diced

1 Large tomato, Diced

1 Tsp. Sugar

1/2 Onion, Diced

1/2 c. Chicken Broth

1 Tsp. White Wine Vinegar

1/8 Tsp. Red Pepper Flakes ( optional)

1 lb Spaghetti Pasta

1 c. Spinach Leaves

1/2 Tsp. Dried Parsley


(1.) Cook Pasta in boiling Salted water until just tender, About 6 to 8 minutes. Drain and set aside to cool.

(2.) In a Large skillet over medium heat  add the Bacon and cook until crispy. Remove to a paper towel to drain and cool. Add the Onion and turn heat to low and cook until tender but not browned. Add in the tomatoes. cook for 5 minutes. Add the Sugar, Salt and Pepper. Cook for 3  minutes. Add in the White Wine Vinegar, Broth and Parsley toss to coat and let cook for 10 minutes or until liquid is evaporated by half.

(3.) Add the Bacon back in , the Pasta and the Spinach. Toss carefully to coat and to let the Spinach wilt slightly. check for seasoning and add more salt and pepper if needed. Pour into a serving platter and serve with crusty bread or a side salad.
