Polenta

This is my Favorite Recipe for Polenta. This Recipe is very easy to make. I often make this This recipe with Grilled Chicken.  You can add any type of seasoning to this Recipe to change the flavor.

3 c. Chicken Broth

1 Tsp. Salt

1/2 Tsp. Pepper

3/4 c plus 2 Tbsp. Yellow Cornmeal

2 Tbsp. Butter, Room Temperature

1/4 c. Parmesan Cheese, Grated

 

(1.) In a large pan with fitted lid add the Chicken Broth and cover with lid. Bring to a boil over medium heat. Remove the lid and add the Salt and stir to dissolve. Slowly whisk in the Cornmeal and whisk until thickend.This takes about 3 minutes. Add in the Pepper and stir to combine. cook for 5 min covered and then turn off the heat and let set for 20 minutes. This lets the Cornmeal steam and plump up.

(2.) After 20 minutes remove the lid and whisk in the Cheese until combined and melted. With a wooden spoon stir in the butter. Vigorously mix for 3 minutes. This will allow the Polenta to loosen up and get creamy. If the mixture gets to thick,  you can add Water or milk until you get the desired consistency you like.  Check for seasoning and add more Salt and Pepper if needed. Pour in to a serving dish and serve.

Like I said above I like serving this with Grilled Chicken. Add some Steamed or Grilled vegetables and complete the meal.  This is just  a variation but you can serve what ever you want with it. I hope you enjoy this simple but delicious Polenta recipe.
