Spaghetti With Shrimp,Spinach And Lemon Vinegarette

spaghetti With Shrimp,Spinach And Lemon Vinegarette is a fantastic Dish. Although it is a healthy dish it is very filling. It has an amazing flavor with a hint of Garlic so it is not over powering. It makes a great date night meal and it is very simple to make.


2 Tbsp. Butter

1 lb. spaghetti pasta

1 Tbsp. Olive Oil

1/2 Red Onion, finely diced

1 Clove Garlic, minced

Juice of 2 lemons

Zest of 1 Lemon

1/2 c. Olive Oil

Salt And Pepper ( to taste)

3 c. Spinach


(1.) Bring a large pot of water to a boil and add about 2 teaspoons of salt to the water and stir. Add in the pasta and stir around to prevent sticking. Let cook for about 8 to 10 minutes until tender but firm. Drain. Reserve about 1/2 cup of the cooking liquid.

(2.) In a large skillet melt the butter and the 1 tbsp of the Olive Oil together over medium low heat. Add in the Shrimp and cook until pink. This takes about 2 or 3 minutes. ( do not over cook). Remove the Shrimp from the pan and add in the Onions and Garlic and cook over low heat until tender. Add in the Pasta, Shrimp and Spinach and toss together.

(3.) In a small bowl whisk together the Lemon Juice, Zest , Salt, Pepper and the 1/2 c of Olive Oil until combined. Pour over the Pasta mixture and toss to coat well. Pour into a Serving Platter and Serve.
