Quinoa Salad With White Wine Dressing

This is an Awesome salad. It is not your average salad with lettuce and tomatoes. It has a great flavor and is very good for you. You can serve this as a side dish or add chicken and make it a main dish.

2 Tbsp. Olive Oil

1/2 Red Onion, Diced

1 Red Bell Pepper, Seeded and Diced

Salt and Pepper ( to taste)

1 1/2 c. Quinoa

1 3/4 c. Chicken Broth

1/2 c. Pecans, Chopped

1 Cucumber, Seeded and Diced Small

2 Tomatoes, Seeded and Diced Small

1 c. Spinach, Chopped

1/4 c.White Wine Vinegar

Salt and Pepper ( to taste)

1/3 c. Olive Oil

(1.) In a large Dutch Oven heat up the  2 Tbsp Olive Oil and add the Onion, Salt and Pepper. Cook over low heat until soft and tender. Add in the Quinoa and stir around to toast. About 2 or  3 minutes. Add in the Chicken Broth and  give it a stir. Cover with lid and let cook for 15 minutes until tender. Turn the heat off and let set for 10 minutes so the steam can settle. Remove the lid and fluff with a fork. Pour or spoon into a large bowl and cover with plastic. Chill for 1 hour.

(2.) When the Quinoa is chilled add in the Bell Pepper, Pecans, Cucumber, Tomatoes and the Spinach. Toss to combine.

(3.) In a small bowl whisk together the White Wine Vinegar, Salt, Pepper and the Olive Oil until well combined. Pour over the dressing and Toss to combine. At this point you can add in Diced Roasted Chicken Breast and call it a meal.

I like to serve it as a Side Dish with something grilled or baked. When I make something healthy I have to make the whole meal healthy. I hope you enjoy this as my family does. It travels well to. I take it on Picnics a lot.
