Raspberry and Blueberry Smoothie

My kids love smoothies. They love them as a quick breakfast before school or just as a snack/pick me up. This is one of their favorites.

3/4 c. Simple syrup ( recipe follows)

1/2 c. Cranberry pomegranate cocktail juice ( i use ocean spray)

1 c. yogurt ( plain or Greek either one is fine)

1/2 c. raspberries ( fresh or frozen – thawed)

1/2 c. blueberries ( fresh or frozen – thawed)

1 tsp. vanilla extract

2 c. ice

(1.) In a blender add in the cooled simple syrup, juice, yogurt, berries and vanilla extract. Blend until smooth. Add in the ice and blend again until smooth. Pour into a pitcher. If you want to chill before serving cover with plastic wrap and chill.  Stir before serving as things tend to settle.

1 c. water

1 c. sugar

(1.)  Combine in a sauce pan and stir. Bring to a boil and turn heat to low and let simmer for 5 minutes. Remove from heat and let cool. Use as much as you need and store the rest in an airtight container up to 2 weeks in the fridge.
