Pulled Pork With Chipotle Peppers

This is an awesome recipe for pulled pork. I got this recipe from a friend and I recreated it with flavors that I like and ones I know my kids will eat.


2 onions, quartered

3 cloves garlic, roughly chopped

3 chipotle peppers, seeded and chopped ( leave seeds in if you want it more spicy)

1 bay leaf

1 can of coca cola

1 c. beef broth

1 tsp. salt

3/4 tsp. pepper

1 (4 – 5 lb ) pork butt


(1.) Heat the oven to 300*

(2.) In a Cast Iron Dutch Oven ( this gives it the home cooked flavor) add in the onion, garlic and bay leaf and set the pork butt on top. Pour in the cola and broth. Sprinkle in the brown sugar, salt pepper and chipotle peppers on top of the meat. cover with lid and place on the middle rack in the oven. Let cook for 2  1/2 hours.

(3.) When the time is up remove from oven and turn the meat over to ensure it cooks evenly and does not burn on one side. Place back in the oven and cook for an additional 2  1/2 to 3 hours. Remove from oven and remove the lid carefully so the steam does not burn you. Take out the meat and place on a plate or platter. Discard the bay leaf. It has done everything it can. Shred the meat using two forks and place the meat back into the pot along with any juices. Toss around so the meat absorbs the juices and gets really good.  You can serve as is or on a bun along with BBQ sauce.
