Grilled Corn Salad With Red Wine Dressing

6 ears of corn

olive oil

1/2 red onion

4 green onions

1 yellow squash, halved

1 zucchini, halved

1 green bell pepper, seeded, cut into quarters

2 tomatoes, halved

salt and pepper ( to taste)

2 tbsp.  red wine vinegar

1/4 c. olive oil

2 tbsp. parsley, chopped

1 clove garlic, minced

(1.)  Heat up a grill pan over medium low heat. Brush the vegetables with olive oil. grill all the vegetables on each side until slightly charred on each side. About 5 or 6 minutes. Take off the heat and set aside to cool slightly.

(2.) Using a knife careful stand up the corn on a flat surface and with a sawing motion cut the corn downward to remove the kernels from the cobb. Place the corn kernels into a bowl.  Dice the rest of the vegetables into medium size dice and put into the bowl with the corn kernels.

(3.) In a small bowl whisk together the red wine vinegar, salt, pepper, parsley,garlic and olive oil until well combined. Pour over the vegetables and toss to coat well. Check for seasoning and add more salt and pepper if needed. Pour into serving platter and serve.

This makes a great healthy side dish. It has big flavor for such an easy dish.
