Southern sausage and egg bake

Don’t have a lot of time in the Mornings. This is a quick and easy recipe that will help you out a bit. It is easy to make and full of flavor. Sometimes I am strapped for time so throwing things together seems easy at the time. this recipe i came up with on a morning like this. Little time and a lot to do. So here it is

4 c. Bread cubes (any kind I use whole wheat)

1 onion, diced

1 green or red bell pepper, seeded, diced

 1 c. diced tomatoes, drained

1/2 lb breakfast sausage, casing removed

1 c. fresh spinach, roughly chopped

1 tbsp. basil, chopped

1/2 c. gorgonzola cheese, crumbled ( or cheese crumbles of your choice)

6 eggs


1. Preheat the oven to 400* and  place bread cubes on a sheet pan. When the oven is hot and ready then toast the bread cubes until golden. This takes about 5 minutes or so. Remove from oven and let cool slightly.

2. In a large skillet heat up some olive oil (1 tbsp) and add the onion, bell pepper, and salt and pepper. Cook for about 10 min over low heat until tender but not browned. Add in the sausage and toss around until cooked through about 10 to 12 minutes or so. Add in the spinach, tomatoes and basil and cook until spinach is wilted about 5 min. Turn heat off.

3. Butter a 8×8 in baking dish or a 9×13 in baking dish and pour in the sausage mixture. spread out  evenly and top with the cheese crumbles and bread cubes. In between the bread cubes crack open one egg at a time and gently place in-between the bread. sprinkle with salt and pepper and bake for 15 minutes for soft eggs or 20-25 minutes for hard-cooked eggs. Serve right out of the oven.


This is so yummy and delicious. great with coffee. This recipe can easily be doubled. Hope you enjoy it I know I do.
